I get a list of 13 firmware images marked Beta, 11 marked Stable, and some unknown number off the bottom of the window. Fortunately the last one that does appear is the 29Apr2021 image so I was able to select it and then tab blindly to the update command. Any reason I shouldn't delete some of these...

You are currently on the bootloader default branch, if you want the latest branch. Read the documentation at https://www.raspberrypi.org/documentation/computers/raspberry-pi.html#updating-the-bootloader and following the instructions under Using raspi-config to update the bootloader section. When I run this program with a print() statement added, the Pico freezes after anywhere from ~20 seconds to ~2 hours. The shell output is terminated at random places. Are you sure it is the Pico freezing and not the tool you are using to monitor those print statements which is freezing ? Which tool...
