There are no current drivers for ST7525 in either drivers/gpu/drm/tiny (the new API) or drivers/staging/fbtft (the older API). As noted there, raspivid automatically enabled --inline if using --segment. Doing something similar in libcamera-vid would be logical.

Welcome to the world of bringing up a new sensor. OV5640 is NOT one of the sensors that support has been added for as yet, so expect issues. raspiraw is really legacy code from when we didn't have a kernel V4L2 driver for the CSI2 driver. It has a place for aiding bringing up sensors, or for serious hacking around in register sets, but shouldn't be the basis of any significant application. 3 seconds at 1080p30 is still 10 is around 233MB...

A colleague of mine was looking at this a week or so back. IIRC It's that the mp4 mux component wants the header bytes in a place that v4l2_m2m didn't store them. I believe he had a fix for it, but don't ask me where the relevant branch would be.
Does it work to mkv or other container?

I believe you can just drop GPIO 20 from that list as they don't have to be in any particular order.

dt-blob.bin is only applicable for the legacy camera stack.
Simplest is to swap the pin_define@CAMERA_0_UNICAM_PORT with pin_define@CAMERA_1_UNICAM_PORT.
