How can I find out what data comes to me on raspberry pi from a device connected via Uart (tx / rx)?

You could watch it with a general purpose serial data client application such as miniterm, minicom, picocom, putty...

Or you could inspect it with a script of your own, perhaps using the Python Serial library. https://pyserial.readthedocs.io/en/latest/examples.html
